canadian pancake recipe

Ingredients

  • 3/4 cups sifted pastry flour (wheat)
  • 2 table spoons sugar
  • 1 tea spoon baking powder
  • 1/2 tea spoon baking soda
  • 1/2 tea spoon salt
  • 2 beaten eggs
  • 1+3/4 cups buttermilk
  • 3 table spoons butter (or oil)

preparation

Stir together flour, sugar, baking powder, baking soda and salt. To well beaten eggs add buttermilk and melted fat. Add liquid to dry ingedients and beat just to combine.

Heat a heavy griddle or frying pan to 380 degrees or until a few dropss of water sprinkled on the griddle or frying pan across the surface and disapear, grease lightly with oil.

For 4 inch pancakes pour 1/4 cupfull of batter on the hot greased griddle.

When edges of pancakes begin to dry and losse their gloss, turn and brown second side, add da little grease to pan if needed.
